Do you do a lot of cooking? I don't remember you ever posting in the food thread. I can make some pretty kickin spicy chicken. It also goes great on casadillas I make. Mostly I never have any time anymore to cook sadly, well at least with being laid off I can start cooking some homemade stuff again. | |

| Chicken quesadillas are delicious! Cooking is a good way to spend your time while you're laid off, like you said. I make this really good Mexican stir-fry with chicken, peppers, rice, beans, and salsa that I love, but it takes like, an hour and a half to make, and by the time I get home from work, the last thing I want to do is spend the whole evening cooking. I would love the time off like you have, but missing the paychecks would kill me. Too many bills! | |

| I usually do two types of Cheese, bacon, Chicken and maybe another thing depending on what I have. I forget the size of the tortilla shells I use though, But I usually spread it all out, and cube the chicken. | |

It's a nice idea, But I only cook for myself, and With my food alergy, I am kind of limited to what I can use/make. (Dang Peanut allergy, and almost everything having at least a trace amount of it) | |

No one to cook for. That's the whole problem, Plus I still have a little fear of not being good enough at something,even as small as cooking a meal. Then again don't most people have this fear? | |

| I can't speak for most people, but the way I look at it is, the only way a person really fails is by not trying at all. There have been things in my life that I have attempted and not been the greatest at, but at least I gave it a shot.
I don't let myself worry about not being good enough at something because I have enough other things to worry about. Plus, I probably have more self-confidence than I need, which is not really a good thing. I have always gone into things thinking that I'll have it easy, and when that doesn't happen, it's a tough blow. Trying to get my writing published has given me a huge dose of humility. I was never really cocky or full of myself or anything, but I am much more realistic about life now. | |
